Our experience at Weisses Rössli was rather mixed. The restaurant does not seem elevated/ elegant from the in- or outside. It gives off more of a diner vibe with a lot of forks and knives set in a trove on the table and many guests sitting closely together. There was only one set of cutlery laid out, which is strange for an elevated Restaurant where you eat multiple courses. The trove of cutlery that blocked 1/3 of the table for most of the meal seemed like a strange addition and something I hadn't really seen outside a very casual setting.Overall, the restaurant got very very loud. It felt like a bar and conversations were impossible to follow. This is obviously not the owners fault directly but maybe inviting smaller groups or elevating the vibe of the restaurant could help.The food was as disappointing as the service. For most of what we had, the taste was good. But it's very apparent that the look of the dish is more important than the edibility. Edibility should always come first.First of all, everything served on the plate should be edible. Second of all, if you serve meat that needs to be cut, you need to supply knifes made for cutting meat. I had a miserable experience trying to cut my meat with a mere butter knife. My husband attempted to tear away the piece of duck that he was sawing at with his butter knife, only to have it fly off of the table. While this was partially his fault, it wouldn't have happened with a proper meat knife.The zucchini Mille-feuille is pretty to look at but inelegant to eat. Cutting into it makes the hummus, which holds the zucchini together, slide around. The assembly is too large not to cut otherwise. The dessert we were served, a peach in wine, was not enjoyable at all. The taste of alcohol was overpowering and the skin of the peach made it impossible to cut through and enjoy. I've made a similar dish with pear many times before and it's not supposed to taste like a shot of cheap wine and the texture is supposed to be soft enough to be penetrated with a spoon.I would give this place a worse star review but I respect the work of this young chef and his team. I hope that this restaurant can grow and improve in the future with a focus on edibility (how the guest eats the food) and elegance.
